This recipe is one of our new favorite side dishes. It goes well with everything and the portion is huge!

Servings: 4
Preparation Time: 7 min
Cooking Time: 16 min (it doesn't take this long when we make it - maybe I keep my burner too hot)
Ingredients
2 tsp butter
1/4 cup(s) scallion(s), minced
2 1/2 cup(s) frozen corn kernels, or fresh corn (no need to thaw frozen corn)
1 tbsp all-purpose flour
1 cup(s) fat-free skim milk
1/8 tsp table salt, or more to taste
1/8 tsp black pepper, freshly ground, or to taste
Instructions
Melt butter in a large skillet over medium heat. Add scallions and sauté until soft, about 2 minutes. Add corn and sauté 1 minute to heat through (or slightly longer if using frozen corn). Add flour and stir to coat corn and scallions. Add milk and bring to a simmer.
Reduce heat to low and cook, uncovered, until mixture thickens, about 10 to 12 minutes; season to taste with salt and pepper. Yields about 1/2 cup per serving.

1 year ago...
At about this time, actually... I was walking in to a Weight Watcher meeting, scared to see what the scale had to say, mad at the world because I wasn't pregnant, and nervous as hell that I was going to have to TELL somebody my weight!
My how things have changed in a year! Yeah, I'm still annoyed I'm not pregnant, but I'm okay, most days. I know I don't have to talk during a meeting if I don't want to, and I'm EXCITED to go to the meetings! I LOVE working out (never thought you'd hear ME say that, huh?). AND I love the way I look 45 lbs down!!!!
Things I've learned this year....
* Portion control - just because it's packaged or served that way doesn't mean it's a portion
* Veggies and fruits are my friends! I can eat them all day long and not get bored. I can't wait for Farmers Market this summer!
* Exercise: Even I can do it! Yeah, it's tough. But, I've found things I love and I do those. I mix it up with the "less fun" things, but then reward myself somehow.
* I didn't gain the weight overnight. It isn't going to disappear overnight.
* I like water! Not purified or out of the tap, but Spring Water is awesome. And I drink TONS all day and pee just as much.
* I'm an emotional eater. Things get bad, I resort to food. I'm still learning ways to deal with that.
And the biggest thing..... I love being healthy! I love being able to walk into a store and not be embarrassed about the size I wear, or struggle to find something that doesn't make me look like my grandmother or a couch!
So, here's to the last 15 lbs.... and a lifetime of healthiness! (And if you want pics - look to your right - the before and current are there for your viewing pleasure)

Fun Day
David and I went to the gym tonight. I decided I wanted to brave a class and did Pilates. I was nervous, but excited. I've heard really good things about it, so thought I'd give it a shot. This particular instructor did everything really slow - really focused on the muscles. It felt really good - I know I'm going to be sore in the morning, but I think I'm getting back into the race! I can tone and relax at the same time! Next week, I'm going to add 30 min of cardio beforehand to get an all around good workout!
And.... my family's family reunion is being held this summer. The last reunion was the summer we got married, so obviously we didn't make it. It's in California - hotel is expensive, flights are insane. So, we decided to drive! We're leaving June 22 (Monday), driving out - getting there on Wednesday. Family reunion is the 22-28, but the "big stuff" is the weekend. Then, we'll leave the 29th and drive home. There is so much to do - hiking cliffs by the ocean, wineries, horseback riding on the beach...... OMG, I am SO excited! We're gonna start saving today so that we have lots of fun money! We're really hoping that we can announce we're pregnant at the family reunion. If not, that's okay. We're still able to see family, 90% of them David hasn't met, and have an awesome time. (The winery won't be much fun if I'm knocked up!)
David got an MP3 player tonight. I get to get one next week. So, when we go to the gym and nothing's on TV, we have something to listen to. He's up adding songs already. I can't wait to get mine!!!!
So, even though it was a LONG day at work, my night was awesome. I really liked the pilates class - I feel like a totally different person now - and I'm so excited about California! That's all for now... more to come soon, I'm sure!

Double Damn
Tonight was weigh in! The good news: David lost 12.4 lbs this week!!!! He is fabulous.
The bad news: I gained 2 lbs since my last weighin on Dec 11. I knew it wouldn't be all that good because I knew I had gained over the holidays. But, I was hoping I could at least "maintain." Nope.
The second bad news: AF showed her ugly fucking head today. So, yet another month down. I know that also contributes to my gain this week on the scale, but it still makes me mad. I want to be a mom. I want to go to my weigh in and say "Hey, I just wanted to say see you in 9 months!" and to go to the school and say "I can't do the BL competition 'cause I'll be gaining weight over the next 9 months."
I keep praying and hoping that there's a reason for all of this. I want to be a mom. David wants to be a dad. And all around us, we see "parents" who should have had to get a permit to even have sex without birth control. When will it be our turn?
Enough of the negative. I'll be back with something more positive in a few days - I hope.

Yet another realization...
So, tonight, Biggest Loser started. If you haven't seen it, go watch it. It's an awesome show. Some people don't like it because that's all they do is work out and eat what's put in front of them. But, the transformations and stories are absolutely amazing!
I needed to go to the gym, so after tutoring I went. I made sure I had my head phones so I could start watching. After about 15 minutes, my knee started bugging me a little. Didn't think anything of it. Then, my incision felt like it was burning. I had to stop after 27 minutes. I all but started crying AT THE GYM. Before my surgery, I was able to do an hour on the elliptical AND 15 min on the Stairmaster AND crunches on the ab machine. Now, I'm doing good to make it 30 minutes just on the elliptical - NO abs or stairmaster.
I called David balling. I feel like I'm a bad wife. I'm getting healthy for myself, yes, but I'm doing it for our family too. We want to have a baby, and I need to be healthy for that to happen.
So I did something to help others - the Biggest Loser has a pound for pound challenge. Basically, you just pledge to lose weight until May 1st. Well, duh! I'm gonna be doing that anyways!! So now people who can't afford food will get some because I'm doing what I've been doing for a year.
I realized tonight that, just because I'm thinner than I was a year ago, doesn't mean I'm healthy. "Healthy" is making healthy food choices AND making healthy exercise choices. I guess I thought that being thinner and looking better would mean that I'm healthy. But, seriously, I should be able to do high intensity cardio for more than 30 minutes without feeling like I'm about to die.
I AM going to get back! I AM going to be healthy - food AND exercise. David and I are going to do it together, for ourselves as individuals, for ourselves as a couple, and for ourselves as a someday-expanding family.

New Layout
Thanks to my friend, Carla, I found the site Cutest Blog on the Block, and changed my background. Now I'm going to be doing this more often because I get bored!
Let's see... what else is new? David's back at work, and my students came back today. So far, we've both kept our exercise goals of working out at least 3 days a week! We have our first weigh in of the new year tomorrow night. Jan 10th is my one year anniversary at WW!
Nothing new on the baby front - we'll see what happens the next week or so, but I'm not all that hopeful. We've both been taking our pills, so hopefully we get our miracle! (Marci - no fertility specialist yet - we're going to try a couple IUIs with the OB if we can't get knocked up on our own!)

First Post of the 2009!
David and I had an awesome time in Kansas City! We stayed at the Sheraton on the Plaza (very nice!), and saw 2 movies (Marley & Me was AWESOME; Tale of Despereaux, not so much). We had dinner at Kona Grill and walked around for a while. Oh, and we went on a carriage ride!
My dad carried on a tradition started last year - New Year's day dinner at our house. He organized and cooked. We just invited. It was nice to see a few people we hadn't seen for a while, and I met one of David's friends from high school and his family.
Our "Gonna Get Pregnant" box showed up while we were gone! I ovulated yesterday (sorry - TMI?), so we're starting the vitamins and hanging out until my next cyle! 2009 WILL bring us a baby!!!
David and I had a long talk on the drive home today. We are both remotivated with our weight loss. He realized he gained most of what he had lost back during our stressful last 6 months. So, when we got home, we sat down and made 2 goals each: 1 weight loss and 1 exercise. David is going to Weigh In tomorrow morning and then again with me on Wednesday. His work schedule is really good this month - every Monday, Tuesday, most Wednesdays, 1/2 Thursdays, and a few Sundays off. We can actually go to the gym and Weigh In together! So excited!!! I put the goals on the fridge so that we will both see them and keep each other accountable!!
My goals: Exercise: 45 min workout at the gym 3 times a week (reward: Wii Active Play "game"). Weight Loss: Down to a Size 12 (reward: a new outfit). Keep me accountable!!!!
We're also getting serious about paying off our CC debts. We are going to try the Snowball method, and in approximately 15 months, we will be debt free. We will still have our 2 car loans, mortgages, and student loans. But, those are much more managable and we can do the Snowball with them too!
2008 has been a long year full of ups and downs, disappointments and joys, tears and laughter, and a whole lot more. Here's to another year!!!!
